Chocolate Scotcheroos

1 c. sugar
1 c. corn syrup
1 c. peanut butter (creamy)
6 c. rice krispies
1 c. chocolate chips
1 c. butterscotch chips
Combine sugar and syrup in a saucepan and cook over medium heat until mixture bubbles.  Remove from heat and stir in peanut butter.  Put rice krispies in a large bowl, and add peanut butter mixture to in and stir until evenly coated.  Press into a 9x13 pan.  Melt chips together and spread over the top.  I like to add sprinkles at Christmas time

Flax and Oat French Bread/Whole Wheat Bread

1/4In Kitchen Aid Mixer put:
4 cups warm water
1 1/2 T yeast
1/4 c. agave
1/2 T salt
1/4 c. olive oil
2 c. oats
1/4 c. ground flax seeds
1/2 c. oat bran or wheat germ
5 c. whole wheat flour
4 -5 c. unbleached flour
Knead for 10 minutes.  Let dough rest on counter for 10 minutes.  Divide into 4 equal portions, and either put into a loaf pan, or divide into 3 more equal portions and braid, and put on pan with cornmeal.  Mix 1 egg with 1 T water in small bowl, and brush mixture on loaves.  Sprinkle with flax/sesame/poppy seeds.  Let rise in cold oven 20 minutes, then turn on oven to 350 degrees and set timer for 40 min.  Removed when golden brown.

Pumpkin Bar Cookies

4 eggs
1 2/3 c. sugar
1 c. oil
1 16 oz can pumpkin (2 cups)
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda

Frosting:
1- 3 oz cream cheese, softened
1/2 c butter, softened
1 tsp. vanilla
2 cups sifted powdered sugar

Beat together eggs, sugar, oil and pumpkin until light and fluffy.  Stir together flour, baking powder, cinnamon, soda, and salt.  Add to pumpkin mixture and mix thoroughly.  Spread batter in ungreased 15x10x1 pan.  Bake in a 350 degree oven for 25-30 minutes.  Cool.  Frost.

Whole Wheat Pumpkin Bread

4 eggs
3 1/2 c sugar
3 1/2 c pumpkin ( large can)
4 1/8 c whole wheat flour
3 1/2 tsp soda
2 1/2 tsp cinnamon
3/4 tsp cloves
2 tsp salt
Mix all ingredients together.  Add 1 cup of chocolate chips (I use semi-sweet).  Bake at 350 degrees for 1 hour

Sandlake Inn Cookies

This is a recipe from a bed and breakfast off the Oregon Coast, that are delicious

3 c. brown sugar
2 c. butter, softened
2 eggs
4 c. flour
2 tsp. baking soda
1 T cinnamon
2 tsp. ginger
1 tsp. salt
2 tsp. vanilla
1 c. chopped nuts (optional)
3 c. chocolate chips
Powdered Sugar for rolling the dough in
Cream the butter and sugar, then add the eggs.  Combine the dry ingredients, and mix, then add vanilla and blend all well.  Add nuts and chocolate chips.  Roll balls of dough into powdered sugar and then bake at 375 degrees for 10 minutes.

Carmel (beware this is irresitable)

This is my Grandma Eldredge's  recipe,and every year she makes this and sends it out to all her children and grandchildren, and we look forward to it every year for Christmas.  I'm trying to continue that tradition.
I start with two pots, one a big heavy pot, and the other a double boiler.  I put them both on medium heat and set the timer for fifteen minutes.
The double boiler pot:
3 cup heavy whipping cream
1/2 cup eagle brand sweetened condensed milk
Stir this once and put the lid on.

At the same time in the heavy pot:
2 c. white sugar
2 c. corn syrup
 Stir constantly

After the fifteen minutes are up, the milk in the double boiler should have formed a scum on the top, (do not boil).  The sugar mixture in the heavy pot should be boiling. 
Start pouring 1/2 cup milk mixture into the sugar mixture, it will bubble up fast so stir quickly, and set the timer for 3 minutes, stirring constantly.  Continue this pattern until you've poured in all the milk mixture.  Put your candy thermometer in and keep stirring until the temperature reaches 230 degrees.  Coat your pan with mineral oil and pour candy in to cool. 
Then I put a piece off and dip it in milk chocolate and place on wax paper ( I use chocoley dipping chocolate, which can be purchased at chocoley.com)
I will also place nuts, like cashews, macadamia nuts, or pecans or walnuts on the wax paper and pour a little Carmel over it and then dip it in chocolate.
A little time consuming, but so worth it.

Pear Pastry

1 to 1 1/2 c. flour
1/2 c. sugar, divided
1/4 tsp. salt
1/2 c. butter
1 egg yolk
3 T milk
1/4 c. cornflake crumbs
3 pears
1/4 tsp. cinnamon
1/8 tsp. nutmeg
Stir together flour, 2 T sugar and salt.  Cut in butter until mixture is like fine crumbs.  Beat egg yolk lightly in measuring cup with fork.  add milk to measure 1/4 cup.  Add to flour mixture and knead to a stiff dough.  Divide into 2 parts, 1 slightly bigger.  Roll out bigger to fit pan, (I use 9 x 13) and press into bottom and sides, sprinkle with cornflake crumbs.  peel and slice pears and place over crumbs.  mix 6 T sugar with spices and sprinkle over pears.  Put other dough (rolled out) over top, and pinch edges together. 
Bake at 375 degrees for 45 minutes.  After cooked pour over powdered sugar glaze
Powdered Sugar Glaze:
combine 1/2 c. sifted powdered sugar with 1/2 to 1 T lemon juice, mixing to a smooth, thin glaze.

Icelandic Pancakes (crepes)

1/3 c. sugar
1/4 tsp. salt
1/4 tsp. cinnamon
1/2 tsp. soda
pictured from left to right (cream cheese filling, strawberries, raspberries, (ham slices), blueberries,  strawberry jam, yogurt, and whipping cream).  What we like on our crepes

1 tsp. baking powder
1 1/2 c. flour
2 eggs
2 c. milk
1/4 c. melted butter
1/2 c. sour cream
1/2 tsp. vanilla
2-3 drops almond extract
Put all ingredients in blender and mix until smooth.  Heat a frying pan over med-high heat with a small amount of oil.  Pour in enough batter to cover bottom of pan, and swirl around until cooking evenly.  when edges turn crispy flip with a spatula, and cook about 30 more seconds.  I like to eat these with fresh berries, yogurt, jam, and a cream cheese filling.  My favorite is strawberries, raspberries, blueberries, strawberry jam, strawberry yogurt and the cream cheese filling.  I also like them with nutella and a little powdered sugar

Cream Cheese Filling
8 oz cream cheese, softened ( I like Philadelphia brand)
1/4 cup butter softened
1 tsp. vanilla
approximately 1/2 cup heavy whipping cream or milk
approximately 2 cups powdered sugar
I never measure the milk and sugar, just keep pouring stuff in until I get a nice thick consistency

Zuchinni Bread (Whole Wheat)

3 eggs-well beaten
3/4 c. canola or olive oil
1 1/2 c. honey or agave
2 cups grated zucchini
3 tsp. vanilla
3 1/2 cups whole wheat flour or GF flour if desired
1/4 tsp. baking powder
1 tsp. soda
3/4 tsp. nutmeg
1 tsp. salt
3 tsp. cinnamon

Mix together first 5 ingredients well, then sift together remaining ingredients and add to the wet ingredients.  Add a package of milk chocolate chips if desired.(and I always desire them )
Bake at 300 degrees for 45 minutes or until toothpick comes out clean.  Makes 2 loaves
